Pavlova is one of the most common deserts here in Australia. Everyone has had Pavlova at some time in their lives and people look at me strangely when I refuse some (I don't like meringue).

It is pronounced pav-LOAV-ah here (I have heard the name pronounced PAV-lo-vah, I don't know which is more correct)

It is made of meringue, whipped cream and (usually) fruit.

Interestingly, though, if you asked the average Australian where the name Pavlova came from, they probably wouldn't be able to tell you.

They used to be offered on the counter menu at Olivia Newton John's Melrose Ave. store Koala Blue.

I just saw a delish recipe for a Chocolate Raspberry Pavlova in the new Nigella Lawson "Forever Summer" book. Can't wait to try it.
